Chicken spice mix

Chicken, Main Dish
Mix well and put in a shaker. Cover one side of chicken with a spice mix. There's no salt (the brine has plenty). Place that side down on the grill and repeat on other side. Grill 3-4 minutes per side.

Salmon Chowder

Fish, Soup
Put potatoes and carrots together in a small saucepan, add salt and water. Cover and cook gently until tender. Remove from heat, but do not drain. Meanwhile, saute onion in butter for 3 minutes. Blend in the flour until smooth and add milk gradually, stirring over medium heat until the mixture boils and thickens. Discard skin from salmon, crush the bones, and flake the fish. Combine fish, crushed bones, and cooked vegetables and their liquid with the thickented milk sauce. Add remaining ingredients. Heat thoroughly and serve at once.

Chocolate raspberry truffle cheesecake

Grind cookies to a fine powder, mix with butter, and press into the bottom and about an inch up the sides of a 9 inch springform pan (or 2 7 inch pans). Refrigerate while making the filling. Combine the chips and cream in a microwave safe bowl and heat at high for 3 to 4 minutes, or until smooth. Stir every minute. Mix in the jam, and stir until dissolved. Let cool 10 minutes. Mix the cream cheese and sugar until smooth. Add the eggs, one at a time, mixing well after each egg. Add the vanilla, and the chocolate raspberry mixture. Mix well.

Skaarup's Chocolate fudge

Line a 9x9 pan with aluminum foil and set aside. Place chocolate chips, vanilla, and marshmallow creme into a 3 quart saucepan (or pyrex bowl) and set aside. Chop walnuts and set aside. Heat milk at medium setting until warm and add sugar. Bring to a rolling boil (medium-high), stirring constantly with a wooden spoon. Continue to boil for about 8 minutes (if using a candy thermometer, continue boiling until temperature reaches 235 F), but do not exceed 9 minutes rolling boil total. Remove from heat and add butter. Stir until dissolved, but no more than 30 seconds.

Turkey Shepherd's Pie (Merlin's Modifications)

Main Dish, Turkey
Prepared mashed potatoes by first boiling the potatoes, then mashing them together with the sour cream, margarine, buttermilk and salt. Set aside. In a pan, saute the onion, carrot and mushroom in the olive oil until everything is soft, and the mushrooms are cooked down a bit. Then add the turkey, and cook until it's brown. Add the thyem, rosemary, flour and salt; stir until the flour is fairly uniformly distributed into the mess. Add the broth, simmer until thickened.

Creamy Spinach Parmesan

Side Dish, Vegetable
Heat large skillet to medium-high (350 F for an electric skillet). Add butter and melt, quickly adding garlic and allow to brown for 1 minute. Add the spinach, reduce heat to medium and cook, uncovered, until it wilts and much of the juices evaporate. Depending on the moisture of the spinach, it may exude quite a bit of liquid. Cook until there is 3-4 tbs of liquid left. Add the cream and cook for 1-2 minutes. Sprinkle in parmesan and mix - it may be a bit thin, give it a minute in the pan.

Clam Chowder

Immerse the carrots, potatoes and onion in the juice from the canned clams--this should come out to around 4 cups of liquid. If it's less, supplement with a little water. Add a bay leaf and the salt, and gently boil until the potatoes and carrots are tender. Remove the bay leaf when done. Meanwhile, chop the bacon into very small bits, and fry over medium heat. You're looking to get the fat out of the bacon, but you'll be keeping this.

Lemon Curd

Snack, Fruit, Sauce, Dessert
In a stainless steel bowl over a saucepan of simemring water, whisk together the eggs, sugar, and lemon juice until blended. Cook, stirring constantly to prevent curdling, until the mixture becomes thick (160 F or 71 C). This will take about 10 minutes. Remove from heat and immediately pour through a strainer to remove lumps. Cut the butter into small pieces and whisk into the mixture until the butter is melted. Add the zest and let cool. The curd will continue to thicken as it cools. Cover immediately and refrigerate up to two weeks. Makes 1 1/2 cups
